Description
Chattanooga Bottled In Bond Whiskey
Chattanooga Whiskey was founded in 2011 by Chattanooga native Tim Piersant with the aim of reviving whiskey production in Chattanooga, Tennessee, where distilling had been absent for over a century. Inspired by the city’s rich 19th-century distilling heritage, Piersant and his team successfully lobbied changes to state law and by 2015 had opened their first distillery downtown, making it the only standalone “Experimental Distillery” of its kind in the country.
The company developed a unique Tennessee High Malt style, built new large-scale production facilities, and released a series of innovative expressions including the “Experimental Single Batch Series”, “91”, “Cask 111”, and a Bottled-in-Bond Vintage Series. Their goal has been to push craft whiskey boundaries by experimenting with malts, yeasts, barrels, and finishes.
The Bottled in Bond Spring 2021 Vintage is a single-season, vintage-dated expression of Tennessee High Malt straight bourbon whiskey, barreled from January through June 2021 and crafted from a wide selection of unique bourbon mash bills produced within the same distilling season, each containing at least 25% specialty malted grains. This innovative interpretation of a classic quality standard blends is aged for more than four years in toasted and charred 53-gallon oak barrels. Bottled at 100 proof (50% ABV), non-chill filtered, and fermented for seven days using an attemperated process, this small batch of just 10–12 barrels delivers layered complexity, with tasting notes of butterscotch candy and cream soda balanced by fresh plum and bright lemon curd.
Chattanooga Whiskey Bottled in Bond Spring 2021 opens with a soft, approachable nose featuring toasted caramel, hints of orange peel, and fresh apple layered over gentle malt sweetness. The palate at 100 proof showcases the distillery’s Tennessee High Malt style, revealing flavors of roasted malt and light chocolate balanced by apple pastry, butterscotch, and a touch of honey. The finish is warming and refined, lingering with dry cocoa, toasted caramel, brown sugar, and a subtle hint of tobacco, resulting in a well-balanced, malt-forward straight bourbon that is nuanced, expressive, and true to its vintage character.
