Sainte-Maure de Touraine, a PDO cheese since 1990, holds a significant place in French gastronomy. Its history dates back to the Middle Ages when goats were brought to the region by the Moors. Produced in the village of Sainte-Maure, located in the picturesque Loire Valley, this cheese is easily identifiable by its log-like shape and the distinctive ryegrass straw that runs through its center, allowing for convenient handling.
The cheese undergoes a process of rolling and charring to develop a dry surface, leading to the formation of a grey-blue edible rind. Following this, it is carefully matured in well-ventilated cellars for approximately a month, resulting in a glossy white interior with a firm texture.
